raw vegan Lasagna

Recipe for 3 to 4 people

I present to you the instructions for a walnut and pesto cheese that give this lasagna all its personality, to continue with the general recipe.

Ingredients

1 medium zucchini

2 large tomatoes, sliced

Basil, to decorate

Nutritional yeast, to decorate

Walnut cheese

1 cup cashews

2 ½ tablespoons lemon juice

1 ½ tablespoons nutritional yeast

1-3 tablespoons of water

2 cloves of garlic

1 pinch of basil

1 pinch of salt

Instructions:

Mix all the ingredients until you achieve the desired texture, the less water you use, the thicker it will be.

Basil pesto

¾ cup basil

⅓ cup almonds

2 tablespoons lemon juice

2 tablespoons olive oil

Instructions:

Blend the basil and almonds while adding the liquids little by little.

Now that we have everything ready, it's time to put together this delicious raw vegan lasagna

  • Take the zucchini and cut horizontally into thin slices
  • In a mold place a sheet of zucchini, in a second layer tomato with pesto on top
  • The third layer is zucchini topped with a thick layer of cheese.
  • Repeat until you achieve the desired height
  • Garnish with basil and nutritional yeast

Mango and avocado ceviche

Fresh and delicious! This recipe is fresh, and above all very simple.

Ingredients

4 tomatoes

1 avocado

1 tablespoon chopped chives

¼ cup chopped cilantro

2 lemons

½ jicama or lettuce (to replace toast)

Instructions:

  • Mix all the ingredients and add the lemon juice
  • Slice the jicama and place the ceviche
  • You can use lettuce leaves and eat taco style

Ingredients:

2 cups of cashews soaked in water for three hours

1 tablespoon pure vanilla extract

1 tablespoons natural stevia

2 tablespoons cocoa powder

1 pinch of salt

½ – ¾ almond milk

Instructions:

  • Drain the water and rinse the cashews
  • Mix together with the vanilla extract, stevia, cocoa, salt and half a cup of almond milk until you achieve a creamy texture.
  • If necessary, add the remaining milk little by little until you achieve the desired consistency.
  • Enjoy!
